Seem to recall some security researchers (based out a US uni I think) published some research into VPN providers. As usual, on my phone so hard to check.

There are the likes of OpenVPN, where you can see what the client is doing - and if know what you are doing with packet sniffers etc you can see for yourself what your outgoing traffic looks like. If you really know what you are doing, you can profile that traffic and attempt to crack it...

never been my actual job, especially now as a project manager, but this week alone I’ve done packet level capture and and analysis for 2 projects - debugging SSL and TLS encryption issues. Reflects more on my clients lack of competent resources when a PM with a masters in business can do a better 2nd level network engineer job than “army of experts” who are near-shores/offshored :evil:
