My old flying-buddy (Chief) was friendly with another guy who flew a Champ....The latter's girlfriend was learning to fly on the latter. She rapidly became a Chief pilot/co-pilot and her and buddy became an item. they married fairly recently, both let licences lapse.
OP you could, (if a man of means) buy a nanolight.....no licence, no annual, no registration,......nada! must carry 3 rd party insurance (how do they know?) and, of course, you must comply with Air-Law. no training needed, now, exercise all those rights and the weather really might kill you
Seriously, though, your instructor must make a living and the aircraft has to cover it's costs. very advanced students may well cope with marginal conditions, but a raw student would get a cancellation.....many have suggested multiple bookings.......that's only fair
if you are able to honour all of them Imagine you have 2 slots Monday and another 2 Thursday.
Good weather holds ....can you afford 4 lessons in one week? or has your poor old instructor got to chase round all the rest of his "book" to find people to fill cancelled slots? OTOH, as in your case, it must be a nightmare trying to keep all students reasonably current when there's a run of bad weather. IF you are able to get there at very short notice, let your instructor know! There's a likelihood (as you said you are not tied to weekends) you could pick up slots from last minute cancellations.
