I've seen an aircraft for sale which has the same engine as my RV6 but is wood and fabric built in the early 70s and is as simple as a simple thing.

I'll never go down the ARC route but I wonder what hoops I'd have to jump through with CAA Surveyors to downgrade to a National PtF>

Can't think of any restrictions that would bother me so what could possibly go wrong?

I assume you are meaning an aircraft on an EASA Certificate of Airworthiness which has been validated annually with an Airworthiness Review Certificate (ARC)?
The short answer, is if there is a Type Owner - you are not allowed to move to a PtoF (unless the type owner comes to an agreement - like what DSL did for SA Bulldogs).
