Sutherland, Schwarzkopf, Waechter a.o. - Giulini conducting. It's a 1959 recording but still considered by many to be the one to have. I certainly wouldn't want to be without it.
There is a DVD recording of Don Giovanni with von Karajan conducting which comes recommended but I'm not familiar with it.

Brahms "Ein deutsches Requiem". Very warm, very Brahms. It needs to be listened to - not background music!
