Sutherland, Schwarzkopf, Waechter a.o. - Giulini conducting. It's a 1959 recording but still considered by many to be the one to have. I certainly wouldn't want to be without it.
There is a DVD recording of Don Giovanni with von Karajan conducting which comes recommended but I'm not familiar with it.
