I have a friend in Spain who wants to repatriate their pet cat to Edinburgh.
I know it has to be with an operator with an AOC
Does the forum know/recommend anyone who can do this?

SaxonAir I believe can if you are considering private charter. I assume Edinburgh is a designated port of arrival. There are also some issues now as to the point of departure. I believe an option can also be to route via the CI's which could be worth exploring.

It is a vastly expensive undertaking, the easiest way is to fly to Paris and take the tunnel trough the pet passport scheme which we do 20 times a year in our motorhome. They could then do a domestic flight to Edinburgh or take the train. A friend of mine specialises I doing it and that’s the route they take.

Actually it isnt that expensive. I think around £10K for a small business jet, and if there are a few of you, then while it is definitely going to be 10x the cost of Easyjet it is very convenient and some will happily spend that on a couple of business class tickets to the States. I guess it is all relative. A friend with a couple of cats makes the trip several times a year, and finds it very a very convenient way to travel. We have done it in the twin a few times. As I mentioned earlier Jersey is a convenient stop over, but it still requires an approved carrier coming in from Europe. Do be aware that after the transition period it would seem that the whole process will become a far greater PITA however you go about it. PS Edinburgh is in fact an approved port of entry so that makes life much easier.
