Many of the "interesting" walks & hikes in the NP's (as well as some areas of BLM and Tribal lands) use a "permit" system to restrict numbers. It's worth investigating those, once you have some dates & itineraries sorted. It tends to keep the rather large numbers of Oriental visitors to their tour buses.
